What is Green Tea?
Green tea is one of the least processed types of tea, made from the leaves of the Camellia sinensis plant. Unlike black or oolong tea, green tea is teamed or pan-fired soon after harvesting to prevent oxidation. This process helps retain its vibrant green color and fresh, grassy aroma.
In Japan, green tea is not just a beverage—it is a reflection of mindfulness, hospitality, and a centuries-old tradition that connects nature, health, and culture.
How Japanese Green Tea is Made
Japanese green tea production involves a meticulous process that emphasizes freshness and flavor:
- Shading (for certain teas like matcha and gyokuro) – Tea plants are shaded for 10–20 days before harvest to increase chlorophyll and enhance umami.
- Harvesting – Only the tender top leaves are hand-picked or machine-harvested during early spring.
- Steaming – Immediately after picking, the leaves are steamed to halt oxidation. This is a key difference from Chinese teas, which are often pan-fired.
- Rolling and Drying – The steamed leaves are carefully rolled and dried to shape them and lock in flavor.
- Sorting & Grading – The leaves are sorted by size and quality, ready to be packed and enjoyed.
At Kyoto Beverages, we source from reputable tea estates in Kyoto, where each leaf is handled with precision and passion.
Origins of Japanese Green Tea
Tea was introduced to Japan from China in the early 9th century by Buddhist monks. Over time, Japan developed its own unique styles and ceremonial traditions, most notably the chanoyu (Japanese tea ceremony).
Among the renowned tea-growing regions, Kyoto—especially the Uji area—holds a place of honor. With its misty hills, mineral-rich soil, and centuries of cultivation, Kyoto has been at the heart of Japanese tea culture since the 12th century. It is here that the harmony between nature, craftsmanship, and tea reaches its most refined expression.
